Watermelon cooler

One of my favourite things about summer is relaxing with an icy cold drink. Whether it's in my backyard, at the cottage, or on a patio, just give me a glass of crushed ice, some juice and a shot of vodka or rum and I'm fully at ease {good friends are also an integral part of the recipe}.

This long weekend, I tried out a few different drinks using Peenie. My go-to is obviously the pina colada, but I made an oh-so-amazing watermelon cooler today and I can't wait to have friends over to let them try. It's frothy and refreshing and doesn't include all of the sugar that goes straight to our asses.


Watermelon cooler {from Porch Parties}

Ingredients
  • 4 cups 2-inch cubes watermelon
  • 1 cup vodka, chilled
  • 2 tablespoons honey
*Note: I didn't have honey, so I used agave and it added the same natural sweetness. I also found it wasn't frothy enough with just the chilled watermelon, so I added about 6 ice cubes.

Directions
Freeze the watermelon chunks in a zip-top plastic bag until just frozen, about 1 hour. Remove from the freezer and add to a blender. Pour in the vodka and honey {add in extra ice if you prefer a frothier drink}.

Process until blended and pour into frosted cocktail or jelly glasses. Garnish if desired.
